Phyllis C. Elk tenderloin is the most tender cut and PH Prime's was perfect. Trimmed beautifully. Sliced it into medallions, quick sear in hot pan. My husband said it was the best meal I've ever made.

Richard C. Elk tenderloin is unbelievably tender and flavorful. Made this for New Year's Eve dinner and it was the highlight. Quick sear on high heat, finished in oven to 125°. Even better than beef tenderloin in my opinion and healthier with less fat.
