George G. Bison ribeye is a revelation. More flavorful than beef, slightly sweeter, and super tender. The marbling on this cut is excellent for bison. Grilled to medium-rare and it was perfect.

Larry E. Good bison ribeye with nice flavor. Grilled it and it came out well. Four stars because it was slightly inconsistent in thickness which made even cooking a bit tricky. But the flavor and quality were excellent.
